STIR FRY VEGGIES


Ingredients:
1-2 diced zucchini
1 tbsp coconut oil
1 clove of garlic
1small yellow onion, sliced into strips
4 heads baby bok choy, chopped
6 fresh mixed mushrooms, sliced
Sesame seeds
Directions:
Heat oil in a frying pan. Add onion, turn heat down and cook 5 minutes, stirring occasionally. Add mushrooms, garlic, bok choy, mirin and tamari. Cover and cook 3 minutes.
Serve while hot over diced un-cook zucchini

DELICIOUS CHOCOLATE SMOOTHIE​

Ingredients:
1 cup of almond milk or rice milk
2 tbsp cacao nibs
1 frozen banana
1 tsp coconut butter
1 peach

Directions:
Put all ingredients in a high-speed blender and blend until smooth.

Power of 3: Apple, Carrot, & Celery Juice ​

​2 red or green apples
3 carrots
6 celery stalks
​

​

A great juice to curve that craving and gain the Power of 3!

Beets on the Grill

​

Ingredients
6 beets, scrubbed
2 tablespoons butter
salt and pepper to taste

​

Directions
Preheat an outdoor grill for high heat.
Coat one side of a large piece of aluminum foil with cooking spray. Place beets and butter on foil; season with salt and pepper.
Wrap foil over beets.
Place packet on the grill grate. Cook 30 minutes, or until beets are very tender. Allow beets to cool about 5 minutes before serving.
You don't even need to peel to enjoy!

Zucchini Puttanesca (serves 2) ​​

Ingredients:

1 OR 2 zucchinis (size does matter)

3 tomatoes diced

1/2 lemon juice​

5 kalamative oils - chopped​

1 pitted date chopped finely (optional)

4 leaves of basil​

dash of Grey Salt (which is raw) / black pepper

***optional, sprinkle of "hot peppers"

before eating.​​

Directions:​

With the spiral, take the 4 zucchinis for both recipes and create into noodle likeness. Prepare the tomatoes, kalamatives, basil and date and blend together. Add lemon juice, a dash of grey salt, black pepper (to your taste) combine all ingredients to the zucchini noodles. Mind you this is a raw recipe so there is no cooking, however you can still "heat it up" or I call it "flash heat" just to create a warmness to it (my preference, however Mary loves it cold as well)

AVOCADO GREENS SALAD​


Ingredients:
1 bunch of spinach
½ Red Lettuce
1 avocado
1/4 red onion chopped
2 tbsp olive oil
1 lemon
salt & pepper to taste
1/2 tsp paprika
Directions:
Chop spinach, lettuce into small pieces.
Place into a mixing bowl and toss
with the olive, lemon juice,
salt & pepper, paprika
Add in the onion & avocado​
